Answer: The Minotaur
Explanation: The hotel's name is La Sonim. Sonim backwards is Minos. Combined with the fact that the hotel itself is a labyrinth, and it brings to mind its singular resident: The Minotaur.
Summary of Receipt
Manager 4 deals with the Minotaur. They also interact with all the other guests - apparently Wednesday didn't have Gungnir so no smiting the Minotaur that way. Also the two rulers of the Otherworld there were indeed trying to get the Olympian Antekey, but once the CaD got it (and activated it via the Minotaur's blood) gave up in order to safeguard their own and to manage the 'fated frenzy' and 'night's procession'. Umbra's also here, but for a different reason - and one the CaD can't mess with, since they've got their hands full with the Antekeys.
Loveland's going to be staying with the CaD for now as well, and Miss. Guile warns them that getting the Helm of Hades - somewhere in the Otherworld, namely Olympus - will definitely not be as easy as the other two. It's also being guarded by Nyx.

The Minotaur has been taken care of, and everyone is safe. Loveland was right. In hindsight, they should have been expecting that at some point. Speaking of, Loveland will be joining us at the Cafe. I'm not sure if he will be rejoining or not, but he will be at least staying with us for the time being. No. 1, No. 44A, and No. 44B were able to secure the Thunderbolt, which seems to be the form of a hotel keycard. Funny. We were able to "activate" the Thunderbolt using the blood from the Minotaur, and we now know where the final piece of the Olympian Antekey lies—it's in Olympus. The Underworld, specifically. Additionally, we exchanged brief… "pleasantries" with the other hotel guests before leaving.

No. 4: Hm. I suppose.
Miss. Wednesday: BAHAHA! What a kill it was!!
No. 4: Thank you. Though, I assume if I was able to slay the Minotaur, surely, you should have been able to as well.
Miss. Wednesday: Ahh… but see, I did not need to. I knew you were coming to deliver the final blow.
No. 44B: Of course… you can see the future, right?
Miss. Wednesday: Well, yes. But also, I was unable to bring Gungnir with me.
Bellhop: Very strict no weapons policy.
Miss. Guile: Very strict. See, I figured the Minotaur wouldn't have been very fun if there were Gungnirs and magic Handscrolls everywhere.

Miss. Guile: Of course… I didn't account for the Bellhop letting in a hulking muscle machine without a reservation.
Bellhop: Well, you see-
Miss. Guile: It's fine. It's whatever. I'm tired of running this fake hotel. And it was quite a show, so all-in-all, it was fun enough.
Miss. Satsuki: Now that your entertainment is done, may we return to our homes?
Miss. Wednesday: Yes. There is much to do before the fated frenzy arrives.
Miss. Satsuki: And I am dreadfully worried about the night's procession.
Miss. Guile: Yeah, yeah, whatever. Get out of here.
No. 1: Hang on. Why were you here?
Miss. Satsuki: To get the Antekey. Same as you.
No. 44B: But now you're just going to leave?
Miss. Wednesday: The prize is yours! What fun is there in taking spoils from the victors?
Miss. Satsuki: Besides, we have our own Antekeys to worry about.
No. 44A: So, like, why would you want another one?
Miss. Wednesday: All good stories come to an End. Wouldn't you want to try to keep that from happening?
No. 44B: Huh.
Miss. Umbra: A pity, really.
No. 4: Umbra!
Miss. Umbra: Oh, hello, [No. 4]. [No. 44A], charmed, as always. [No. 1] and [No. 44B], it's been a while, hasn't it?
No. 1: You're not getting the Antekey Umbra.
Miss. Umbra: Antekey? Mm… hadn't crossed my mind.
No. 44A: Yeah, right. We know why you're here.
Miss. Umbra: Oh, I assure you, you don't. Sadly, this hotel did not have the "amenity" I was searching for. Oh well. I'll just have to keep searching. Seems it's all I ever do anymore.
No. 44A: We're not just going to let you walk out of here!
Miss. Umbra: You will. I am here on the business of the Morbid King. If you attack me, that is casus belli. Your pathetic little organization would be wiped off the map and sunken into the Everdark Pits without a second thought.
No. 4: Let him go.
No. 44A: Let him go?! Do you know how many times he's tried to kill us?!
No. 4: Yes. But we have our goals. He has his. They are not in conflict, and getting to the End is more important than taking on all of the Everdark.
Miss. Umbra: Thank goodness the frog called for you and not [No. 5]. At least you have some common sense. It's been a pleasure, Baristas. Tell [No. 5] [CaDCOM FILTERED EXPLETIVE DETECTED].
No. 44A: Ugh. I hate him.
No. 4: Same.
Miss. Guile: Well, congrats. You did it. Off to find the Helm next? Good luck. Despoina was a pushover, and I arguably went easy on you. My mom? Mm… she's not known for going easy on people.
